Moth is Mangodi is a quintessential Rajasthani dried speciality.
This one is made with Moth Daal, which is basically Moth, Turkish grams or Matki also popularly known as in India. It is the hulled and split version of the Moth beans. It is a drought-resistant legume, commonly grown in arid and semi-arid regions of India.
In the olden days, when refrigerators were not common in Rajasthan and sunlight was in abundance albeit fresh veggies were scarce, people relied on dried delicacies like Mangodi and its variants in different daals to add varieties of flavours, textures and nutrition to their diet.
Moth mangodi is a delish delicacy now. Its made by sun-drying a paste made with Moth Daal per our age old family heirloom recipe.
You can use it like any other Mangodi or Badi.
